Goji Berry Coconut Muffins
Lets get baking! I’ll cut right to it: Goji Berry Coconut Muffins. So good. Here’s what you need…
- 3 cups rolled oats (gluten-free if necessary)
- 2-3 scoops protein powder
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1 tsp ground cinnamon
- 1/2 tsp sea salt
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened applesauce
- 1/2 cup plain (or honey) greek yogurt
- 2 T coconut oil, melted
- 1/4 cup honey (or maple syrup)
- 1 cup unsweetened almond milk
- 1/2 cup goji berries
- Coconut shavings
Now what to do with all those ingredients…
- Preheat oven to 350 degrees F.
- Combine oats, protein powder, baking powder, goji berries, cinnamon and sea salt in a bowl.
- In a separate bowl combine eggs, vanilla extract, applesauce, greek yogurt, coconut oil, honey (or maple syrup) and almond milk.
- Add wet ingredients to dry and stir together.
- Grease a muffin pan with coconut oil.
- Pour batter evenly among the muffin pan.
- Sprinkle coconut shavings across muffin tops.
- Bake for 15-20 minutes.
- Let cool for 15 minutes before removing to cool completely.
These can be stored in an airtight container or frozen. I freeze mine and microwave a couple in the morning to have with my cup of tea. Enjoy!
