Tomato Mozzarella Basil Salad
While eating lunch between classes today someone asked me, “How do you always bring your own food instead of buying something to eat from the dining hall? Doesn’t it take forever to make?” Well, when you don’t buy a meal plan after you move off campus, you have to get creative and efficient. Every college student has limited time to prepare a good meal. Here is an inexpensive and simple dish any college student can throw together in ten minutes or less.
Ingredients:
- One large tomato
- Approximately three ounces of mozzarella cheese
- Basil
- Ground pepper
- Your choice of vinaigrette dressing
Instructions:
- Slice tomato and mozzarella cheese
- Alternate placing tomato and mozzarella slices on a plate.
- Set basil leaves over tomato and mozzarella slices.
- Drizzle vinaigrette dressing and sprinkle ground pepper.
